Adzuki Bean Brownies

You may have heard that we have the best chocolate in Switzerland. So it’s no surprise that we eat a lot of chocolate – and with a lot I mean A LOT – more than 11 kg per person a year. As a matter of fact we’re number two in Europe when it comes to chocolate consumption – only the Germans eats more. Even Belgium – the self-proclaimed chocolate nation – only eats around 4 kg per person a year. Maybe their chocolate isn’t as good as advertised… I’m just saying 😉

Anyways, since I’m a big fan of healthy-ish recipes I’ve created a brownie recipe that uses adzuki beans instead of flour and medjool dates and maple syrup instead of refined sugar. Chia seeds, pecans and almonds give them some extra protein. Feel free to pimp the recipe to your liking by adding stuff (like cornflakes or dried cherries). Hello, guess who? After a hiatus of more than four months, I’m finally back. As the weather turned cold, I kind of fell into a state of hibernation and didn’t feel like creating content for the blog. But now I’m back and ready to share with you some epic new recipes I’ve came up with the last couple of months. The first one is this delicious, healthy winter granola made of oats, nuts, seeds, cranberries and apples with a sprinkle of pumpkin pie spice. Salmon Mango Poké Bowl

One of my favorite dishes I’ve encountered on my travels is the poké bowl. It’s a traditional Hawaiian dish usually consisting of rice, veggies and seasoned raw fish. You can get it pretty much anywhere if you happen to be in Hawaii (lucky you!). If not, go ahead and make your own. This recipe is packed with some of my favorite ingredients: salmon, mango and avocado.
